NEW ORLEANS, La. (NOLA NOW) -
Ingredients
- 1 package refrigerated crescent roll dough (8 count)
- 2 links cooked boudin sausage (about 12–14 oz total)
- 1 egg (beaten, for egg wash)
- Optional toppings: sesame seeds, poppy seeds, or shredded cheese
Instructions
- Preheat oven to 375°F (or temperature listed on crescent roll package).
- Prep the boudin: Remove boudin from casing. Break apart the filling with a fork so it’s crumbly.
- Unroll the crescent dough and separate into 8 triangles.
- Fill and roll: Place 1–2 tablespoons of boudin filling at the wide end of each triangle. Roll up toward the point, tucking in the sides slightly to keep filling in.
- Brush with egg wash for a golden finish. Add toppings if desired.
- Bake for 10–12 minutes, or until golden brown.
- Serve hot with Rouses Creole mustard, pepper jelly, or your favorite dipping sauce.
