NEW ORLEANS, La. (NOLA NOW) -
Ingredients:
- 1 TBSP bacon fat (or olive oil)
- 1 LB Italian sausage, casings removed
- 1 sweet onion, diced
- 2–3 cloves garlic, minced
- Red pepper flakes (optional, to taste) (omit for mild/kids) OR Italian soffritto seasoning
- 3–4 handfuls fresh kale, chopped
- 1 (14–15 oz) can petit diced tomatoes
- 8 cups chicken stock
- ½ LB dried navy (pea) beans, partially cooked
- 1 tsp dried oregano or 1 TBSP fresh oregano
Add all of this and let it simmer until beans are fully tender and flavors are blended.
